Manuel holds a Bachelors in Business and International Hospitality Management from the Swiss Hotel Management School, Les Roches (Bluche, Switzerland, 2002) and a diploma of Hospitality Management from the Swiss Hotel Management School, Les Roches (Marbella,Spain 2000)
Before starting his career in the US, Manuel fulfilled several positions in Europe while completing his studies. He worked in Holland (2000) for the Meridian Hotel as Assistant Restaurant Manager as well as in Munich (2001) for Dukaez Restaurant as the Assistant Catering Manager where he was responsible for designing menus as well as developing business.
In the fall of 2003 Manuel choose to move to the USA where he worked in the opening team for the Four Seasons Hotel Miami as Assistant Food and Beverage Manager.
In 20005 Manuel choose to join another opening team and joined the much awaited Setai South Beach as Director of Room Service. This position gave him his first glimpse of the potential that South Beach had to offer in the international culinary scene.
Wanting to experience the culinary wave that was happing in Miami, Manuel chose to join independent restaurant and club, Casa Tua. He joined their team as Club Manager in 2007. Casa Tua is renowned for its Italian Fine Dining service and formed part of their opening team for Casa Tua Aspen before leaving the company and pursuing his dream of opening his own restaurant, Barceloneta.
Manuel is also founder and Co-Owner in two other Food and Beverage endeavors, Negro de Anglona Restaurant in Madrid and Mammas on Wheels Catering in Miami.
